What are stop words and should I remove them?

The most common function words — the, and, of, to. Removing them is right when you want to see what a text is about, since they otherwise dominate every count. Keep them when analysing style, where their frequency is the signal.

What does lexical variety tell me?

The ratio of unique words to total words. A low ratio means heavy repetition, which can indicate keyword stuffing or simply a narrow topic. It falls naturally as a text gets longer, so only compare passages of similar length.
